Recently, we had the amazing opportunity to sit down with owner Judah Lynch, manager Eric Pratt, and Executive Chef Toni Burton for a behind-the-scenes look at Mullet Bay’s direction and vision. What quickly became clear is that the restaurant’s recent transformation was not accidental; it was thoughtful, strategic, and rooted in a desire to elevate diners’ experience while preserving its island charm.

New Ownership, Fresh Energy

In early 2024, Judah Lynch, also the owner of Indigo Shanty in Brunswick, purchased Mullet Bay with plans to refresh both the space and the menu. As promised, renovations followed. About a year ago, the restaurant was redecorated and updated, and today the results speak for themselves.

While the patio remains a lively highlight, the interior feels warm, inviting, and comfortable. Soft lighting, subtle details, and an open, welcoming layout create a space where guests naturally want to linger. In other words, once you step inside, you’re inclined to sit down and stay awhile.

Equally important, the hospitality stands out. The wait staff and bartenders greet guests with genuine smiles, and their attentiveness adds to the relaxed but polished atmosphere. From start to finish, the team aims to please, and they absolutely succeed. “We’ve continued to grow and train. We want to keep growing anyway that we can to make us better, and to improve the restaurant or service”, said Mullet Bay Manager, Eric Pratt. “We have two employees who have been working at Mullet Bay for 30+ years.”

Elevated Favorites & Creative New Flavors

Of course, a beautiful space means little without exceptional food. Fortunately, Executive Chef Toni Burton, originally from Kingsland, Georgia, has taken the menu to another level.

First, she upgraded several longtime Mullet Bay favorites by incorporating little creative twists. Then, she introduced new dishes, including her award-winning Braised Short Ribs. The team even brought over a few beloved favorites from Indigo Shanty. The result is a seamless blend of familiar comfort and exciting innovation.

We had the opportunity to try the Braised Short Ribs, and they are nothing short of spectacular. In fact, they are so incredibly tender and flavorful that you don’t even need a knife. Rich, savory, and slow-cooked to perfection, they easily steal the spotlight.

Meanwhile, the Thai Noodle Salad offers a lighter yet equally impressive option, adding perfectly cooked Wild Georgia Shrimp, and it’s a definite winner. Fresh, vibrant, and layered with flavor, it balances beautifully with heartier entrées, and the dressing is unbelievably delicious.

Additionally, the Sweet Bourbon Brussels Sprouts are unforgettable, perfectly caramelized with just the right touch of sweetness. You’ll want to come back for more. And those are only a few of the standout dishes. Everything tastes incredibly fresh because it is fresh. The finest, freshest ingredients make for really great food.
